Spinach Puff Pastry

Man shall not live by bread alone, but by every word that proceeds from the mouth of God. Luke 4:4

It's Lent, and you're not supposed to think about food. But if you're responsible for feeding your household... you have to find something for them to eat. I made this up for dinner tonight using a few websites and some prayers.

Spinach Puff Pastry

1 sheet of frozen puff pastry (half a package)
1 package of frozen spinach (1 lb.)
1/2 an onion
garlic cloves
lemon juice
dry mint
salt & pepper
oil

Thaw frozen puff pastry at room temperature for 40 minutes.

Thaw frozen spinach in a medium saucepan for 40 minutes on low.

Preheat oven to 400 degrees.

Chop half an onion and some garlic gloves (I used 5 or 6... maybe you like more or less).

Thoroughly drain the spinach and move to a plate.

Saute onion and garlic in a bit of oil on high until onions are pale gold.

Add spinach and stir around until just wilted.

Put the mixture back in the plate and season with salt, pepper, and lemon juice to taste (the lemon juice is the best part for me).

I was suddenly brave and sprinkled dry mint (yay for 7amati who brought it with her!) into the spinach. Try it if you have the courage... it was an excellent addition.

The puff pastry comes folded in three. Cut on the folds and roll each part out into a longer, wider rectangle. Load the rectangles up with the spinach mixture and fold, pressing down on the edges. Flip the packets and put them fold down onto a rimmed baking sheet, side by side.

Bake at 400 degrees for 30 minutes. Makes three. We served it with french fries (of course).
