Lemon Baked Fish

You have a mighty arm; Strong is Your hand, and high is Your right hand. Righteousness and justice are the foundation of Your throne; Mercy and truth go before Your face. (Ps. 89: 13, 14)

After you've fried fish breaded in flour a thousand times, it gets a little boring. It's also not as tasty on the second day. I adapted this recipe from Taste of Home to refresh my fried fish.

Ingredients
2 tablespoons all-purpose flour
1/2 medium onion, chopped
1 cup water
1 maggi (vegetable bouillon)
3 tablespoons lemon juice
2 teaspoons dried basil
1/2 teaspoon dried thyme
4 lemon slices (optional)
2 tablespoons minced fresh parsley (optional)
Hot cooked rice

Directions
1. Saute onion in oil in a saucepan
2. Add flour, stir to form a paste
3. Add water and maggi
4. Add lemon juice, basil, and thyme
5. Stir until bubbly
6. Pour over fish and bake for 25-30 min. at 350°
7. Serve over rice if desired.
